Horse racing fans and those who call Louisville, Ky., home know the first Saturday in May is a much-anticipated cause for celebration. But more and more, the Kentucky Derby is becoming an unofficial holiday for everyone who appreciates the sport of kings, the arrival of springtime and - perhaps most importantly - some truly mouthwatering food.
You don't have to be born and raised in the South to appreciate this race-day menu, either.
Not only will your guests find these recipes delicious, you will appreciate how easily they come together in the kitchen. That leaves you more time to mingle with your guests and keep the mint juleps flowing!

Win, Place and Show Sandwich
11/4 lbs. beef filet mignon
Salt and pepper to taste
4 buttermilk biscuits, prepared and cut in half
4 Tbsp. whole-grain mustard
16 leaves spinach
1 tomato sliced thin
3 Tbsp. olive tapenade
1 (1.5 oz.) jar roasted red peppers, sliced thin
Season filet with salt and pepper on all sides and grill over medium-high heat to medium rare (140 degree internal temperature) or desired doneness. Let rest 5 minutes and slice thin. To create the sandwich, spread mustard on the bottom half of the biscuits. Top with 4 spinach leaves, tomato slice, olive tapenade, red pepper slices and sliced beef. Serves 4.

Appetizer Burgers
11/2 lbs. ground chuck
1 head bibb lettuce, washed and separated
1 small red onion sliced
8 silver dollar buns
Form ground chuck into eight 3-ounce patties. Grill until no pink remains (160 degrees internal temperature). Build the sandwich by layering lettuce, red onion and burger on bun.

Winner's Circle Citrus Salad
1/2 c. orange juice
1/2 c. cider vinegar
1/4 c. grape seed oil
2 oz. arugula, cleaned
2 heads radicchio, cleaned and chopped
Salt and pepper to taste
5 oranges peeled and sliced
In a small bowl, whisk together orange juice, vinegar and oil to create dressing. Place arugula and radicchio in a large mixing bowl, coat with dressing, salt and pepper to taste. Toss gently, then serve with oranges. Serves 4
