Apple Pie Bread

Wednesday, February 13, 2008 4:02 PM CST

1 (20 oz.) can apple pie filling

3/4 c. apple juice

1/2 c. butter or canola

3/4 c. sugar

1 Tbsp. salt

2 pkg. yeast

1/2 c. warm water

1 Tbsp. cinnamon

6-7 c. flour

In a large bowl, dissolve 2 packages of yeast in 1/2 cup warm water, with 2 tablespoons sugar. Combine and heat to 115 degrees, apple juice, butter or canola oil, sugar and salt. Then add to the yeast mixture, along with 31/2 cups flour, 1 tablespoon cinnamon. Mix with flat beater, then add apple pie filling and continue to mix. Put bread hook on and add 3 cups flour. Continue to knead. Turn out onto board and knead until smooth, adding flour as needed. Put into greased bowl, let rise until doubled. Punch down.

Divide into two and put into greased bread pans. Brush with butter, cover, let rise until doubled. Bake 45-50 minutes or until done in 350 degree oven.

This recipe is courtesy of Marian Torkelson, Windom, Minn. It can also be found in the Tri-State Neighbor Country Cookbook, Third Edition page 29.
